Homemade Chili Rellenos - cooking recipe
Ingredients

4 to 6 large sweet or hot green peppers (not bell peppers)
1 lb. baby Swiss cheese, grated
1 large onion, grated
1 c. flour
4 egg whites, beaten until stiff
4 egg yolks
Preparation

Preheat oven to 400\u00b0.
Mix cheese and onion together.
Add salt and pepper to taste.
Boil peppers for 2 minutes; cool.
Slit peppers down side and remove seeds; rinse loose seeds out with cold water.
Stuff peppers with cheese mixture (save 1/4 cup for topping).
Close peppers tightly.
Roll gently in flour.
When all peppers are covered with flour, set aside.
