Leek And Potato Soup - cooking recipe

Ingredients
    2 qt. water or stock
    3 c. sliced or diced potatoes
    3 c. thinly sliced leeks
    1 Tbsp. salt
Preparation
    Simmer vegetables and water or stock and salt for 40 minutes. Pass through food mill.
    Just before serving, add 1/2 to 1 cup of heavy cream.
    Decorate with minced parsley or minced chives.
    This soup can be served hot or cold.
    When served cold, heavy cream may be replaced with sour cream.
