Spinach Dumplings - cooking recipe

Ingredients
    1 (15 to 16 oz.) container Ricotta cheese (2 c.)
    1 (10 oz.) pkg. frozen, chopped spinach, thawed and squeezed dry
    1/2 c. grated Parmesan cheese
    1/2 tsp. salt
    1 egg
    1 garlic clove, minced
    flour
    water
Preparation
    Mix the first 6 ingredients and 3/4 cup of flour on waxed paper.
    Measure 2 tablespoons of flour and with floured hands, shape spinach mix into 1-inch balls.
    Gently roll balls in 2 tablespoons of flour to coat.
    Heat 4 to 5 quarts of water to boiling and carefully add spinach balls, 1/2 at a time, to water. Cook 10 minutes or until slightly puffed.
    Remove and drain.
