Squash Casserole - cooking recipe

Ingredients
    2 yellow squash
    2 zucchini squash
    1/2 onion
    salt and pepper
    2 c. Mission tortilla chips
    1/2 c. grated Cheddar cheese
    1/4 c. jalapeno pepper slices
    1/4 c. picante sauce
Preparation
    Slice squash in 1/8-inch slices.
    Cook in boiling water with onion until nearly tender.
    Lift out of water with a slotted spoon and layer on bed of chips that have been prepared in a long casserole dish.
    Grate cheese over squash and add pepper, if desired.
    Broil or bake in oven until cheese is bubbly.
    Salsa or picante sauce can be added as a garnish or may be added when served.
    Makes 8 servings.
