Pepper Relish - cooking recipe
Ingredients

5 1/2 c. chopped green peppers
1 1/2 c. sugar
1 pt. vinegar (5%)
5 c. chopped white onions
5 1/2 c. chopped red peppers
3 Tbsp. salt
Preparation

Wash peppers and remove seeds and white portion. Peel onions and chop fine. Combine and cover with boiling water.
Let stand 10 minutes. Drain. Combine vinegar, sugar and salt. Add pepper mixture. Bring to a boil and boil gently for 5 minutes.
Pour immediately into hot sterilized jars.
Seal at once.
Makes about 5 pints.
