Buttermilk, Wild Rice And Pecan Pancakes - cooking recipe

Ingredients
    3 c. water
    2/3 c. wild rice
    1 1/2 tsp. salt
    1/2 c. sifted all-purpose flour
    1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. ground black pepper
    1/2 c. buttermilk
    1 large egg
    1 Tbsp. whipping cream
    1/4 c. chopped pecans, toasted
    1 1/2 Tbsp. finely chopped shallot
Preparation
    Combine 3 cups water, wild rice and salt in medium saucepan. Bring to a boil. Reduce heat and simmer until wild rice is tender (about 40 minutes). Drain well.
    Cool to room temperature. Can be prepared ahead a day or two.
    Store, covered and refrigerated.
