Jambalaya Grits - cooking recipe

Ingredients
    2 Tbsp. bacon grease
    1/2 c. chopped yellow onion
    1/2 c. chopped celery
    3 fresh tomatoes, peeled and chopped (approximately 1 c.)
    1 c. ground ham
    2 Tbsp. flour
    1 green pepper, chopped
    1 c. quick grits
    bacon, cooked and crumbled
Preparation
    Heat bacon grease in a heavy skillet.
    Gradually add flour, stirring constantly, until roux becomes light brown.
    Add onion, green pepper and celery. Cook for 5 minutes.
    Cook grits according to package directions.
    Add to roux.
    Add tomatoes and ham. Sprinkle with bacon and serve immediately. Serves 6.
