Hearty Potato Soup - cooking recipe

Ingredients
    6 medium potatoes, peeled and sliced
    2 diced carrots
    2 c. diced celery
    2 qt. water
    1 c. chopped onion
    6 Tbsp. butter or margarine
    6 Tbsp. all-purpose flour
    1 tsp. salt
    1/2 tsp. pepper
    1 1/2 c. milk
Preparation
    In large kettle, cook potatoes, carrots and celery in water until tender, about 20 minutes. Drain, reserving liquid; set aside. In the same kettle, saute onion in the butter until transparent or soft. Stir in salt, pepper and flour. Gradually stir in milk, stirring constantly, until thickened. Gently stir in cooked vegetables. Add 1 cup or more of reserved liquid, depending on desired thickness.
    Heat thoroughly. Serve. Makes about 2 1/2 quarts. Serves 8 to 10 people.
