Sweet Pickle Relish - cooking recipe

Ingredients
    4 c. chopped cucumbers
    3/4 c. chopped bell pepper
    3/4 c. chopped sweet red pepper
    2 c. chopped onion
    1/4 c. pickling salt
    1 3/4 c. sugar
    1 c. cider vinegar
    1 1/2 tsp. mustard seed
    1 1/2 tsp. celery seed
Preparation
    To save time I chop the vegetables in a food processor. In a large bowl, combine all the vegetables, then sprinkle the salt over them and cover with cold water.
    Let stand 2 hours. Drain. In a large pot, combine the sugar, vinegar and spices; bring
    to a
    boil.
    Add the vegetables.
    Return to a boil and lower
    heat. Simmer
    12
    minutes.
    Pack
    into
    hot sterilized jars,
    leaving 1/4 inch headspace.
    Wipe jar rims and cover at once with metal lids and screw on bands.
    Process in hot water bath for 10 minutes.
    Yield: 4 half pints.
