Zucchini Relish - cooking recipe
Ingredients

8 c. ground or chopped zucchini
3 sticks celery
3 onions
2 green peppers
2 carrots
3 Tbsp. salt
3 c. sugar
1 c. water
2 c. vinegar
2 Tbsp. mustard seed
2 Tbsp. celery seed
3/4 tsp. turmeric
Preparation

Grind or chop all and mix in 3 tablespoons salt.
Refrigerate overnight.
Next morning, drain and rinse well.
Mix sugar, water, vinegar, mustard seed, celery seed and turmeric.
Mix and boil 5 minutes; fill jars and seal.
