Fluffy Mushroom-Rice Saute - cooking recipe

Ingredients
    1 c. rice
    3 slices bacon
    1/2 c. green onion slices
    1/2 c. sliced mushrooms
    1 1/2 c. water
    1/2 tsp. salt
Preparation
    In a large skillet cook bacon.
    Remove to paper towel.
    Cool. Drain all but 2 tablespoons of the drippings.
    Add rice, onion and mushrooms.
    Saute until rice is browned.
    Add water and salt and bring to a rolling boil.
    Reduce heat to low, cover and simmer 12 to 15 minutes or until water is absorbed.
    Remove from heat and let stand, covered, 5 minutes.
    Crumble bacon and toss with rice. Makes 4 to 6 servings.
