Minted Grapefruit Leg Of Lamb - cooking recipe
Ingredients

1 onion, sliced
1 carrot, sliced
1 rib celery, sliced
1 (7 lb.) leg of lamb
1 tsp. salt
1/4 tsp. pepper
3 c. Florida grapefruit juice
1 tsp. dried mint
Preparation

Arrange vegetables over bottom of roasting pan.
Rub lamb with salt and pepper.
Place on top of vegetables.
Pour grapefruit juice mixed with mint over lamb.
Bake at 325\u00b0 for 2 hours, basting every 15 minutes with pan drippings.
Serve with strained pan drippings.
