Sausage, Potato And Kale Soup - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 c. chopped onion
    1/2 c. chopped carrot
    6 c. chicken broth
    1 1/2 lb. potatoes, scrubbed and cubed
    1 tsp. minced garlic
    1 lb. smoked sausage, cut in 1/2-inch thick rounds
    1 (10 oz.) box frozen chopped kale or turnip greens
Preparation
    Put oil in a 4-quart Dutch oven over medium-high heat.
    When oil is hot, add onion and carrot.
    Cook 4 to 5 minutes until onion is tender, stirring once or twice.
    Add broth, potatoes and garlic.
    Bring to a boil, cover and reduce heat to low.
    Simmer 30 to 35 minutes until potatoes are tender, stirring occasionally.
