Banana-Pecan Biscotti - cooking recipe

Ingredients
    1 3/4 C. flour
    1 tsp. vanilla
    1/2 C. sugar
    1 T. vegetable oil
    1 tsp. baking powder
    1 egg
    1/4 tsp. salt
    1/3 C. chopped pecans, toasted
    1/3 C. very ripe banana (about 1, mashed)
Preparation
    Preheat oven to 350 degrees.
    Lightly spoon flour, sugar, baking powder and salt until blended.
    Combine banana, oil, egg and vanilla in a bowl; stir in flour mixture and pecans (dough will be sticky).
    Turn dough out onto floured surface. Shape into 2- 8 in. rolls. Place on sprayed baking sheet and flatten to 1/2 in. thick.
    Bake at 350 degrees for 23 minutes.
    Remove from pan and cool 10 minutes.
    Cut each roll into 1/2 inch slices.
    Place sides down on pan.
    Bake at 250 degrees for 15 minutes, then turn over and bake another 15 minutes.
    Remove from sheet and cool completely.
    Cookies will harden as they cool.
