Crustless Quiche Lorraine - cooking recipe
Ingredients

10 slices bacon, crisply cooked and crumbled
1 c. shredded Natural Swiss cheese (about 4 oz.)
1/4 c. minced onions
4 eggs
1 (13 oz.) can evaporated milk
3/4 tsp. salt
1/4 tsp. sugar
1/8 tsp. cayenne or white pepper
Preparation

Cook bacon in microwave oven between layers of paper toweling about 8 to 10 minutes. Drain well and crumble bacon.
Sprinkle cheese, bacon and onion in a 9-inch glass pie plate bottom.
Beat remaining ingredients with a rotary beater until well blended. Pour over bacon-cheese-onion mixture.
Bake in microwave for 9 minutes. Turn dish 1/4 turn every 3 minutes of cooking time. Allow to stand for 10 minutes for center to finish cooking before cutting.
Serves 6.
