Tian Of Zucchini, Tomatoes And Potatoes - cooking recipe

Ingredients
    2 zucchini
    2 tomatoes, preferably Italian
    2 baking potatoes
    1/3 c. olive oil
    basil, fresh or dried
    salt and pepper
Preparation
    Thinly slice vegetables.
    Oil a shallow casserole dish (I use an earthen ware pie plate) and arrange vegetables, alternating layers, starting with potatoes.
    Coat them with olive oil and some of the basil.
    Bake for 30 minutes or until potatoes are tender. I like them to crisp on the edges.
    Sprinkle remaining basil on vegetables and salt and pepper to taste.
    Delicious with a veal chop.
    Serves 4.
