Fried Partridge - cooking recipe
Ingredients

partridge
baking soda
water
butter and oil for frying
salt to taste
1 egg, beaten
flour
Preparation

Boil
cleaned breast in 1 tablespoon of baking soda and 3 inches
of\twater
in
pan.
Boil small breast 10 minutes or large breast 15 minutes.
Dry and cut into pieces and debone. Coat meat with egg and then in flour.
Next, fry in butter and 1 tablespoon oil; fry until tender.
