Carrot And Potato Soup - cooking recipe

Ingredients
    1 Tbsp. soft tub margarine
    2 med. sized onions ends removed, peeled and diced (about 2 c.)
    1 clove garlic crushed
    8 c. low fat, low sodium chicken broth
    1 1/2 lb. potatoes, peeled and diced (about 4 c.)
    1 lb. carrots, diced (about 2 c)
    1 tsp. ground white pepper
Preparation
    Melt margarine in stock pot and saute onion and garlic until translucent.
    Add broth, potatoes and carrots; bring to a boil, reduce heat and simmer until potatoes and carrots are cooked. Puree as much of the potatoes and carrot mixture as you wish return to the broth.
