Green Tomato Relish - cooking recipe

Ingredients
    6 qt. chopped green tomatoes (about 36 to 40 medium sized)
    1/4 c. salt
    1 1/2 qt. chopped onion
    3 c. chopped green pepper
    1 1/2 c. chopped red sweet pepper
    3 c. sugar
    1 1/2 qt. vinegar
    2 Tbsp. whole mixed spices
Preparation
    Mix tomatoes and salt thoroughly.
    Let stand overnight; drain. Combine with onion, green and red peppers, sugar and vinegar. Tie spices loosely in a cheesecloth bag and place into tomato mixture.
    Bring to a boil.
    Boil gently for 1 1/2 hours.
    Stir frequently.
    Remove spice bag.
    Pour relish into hot sterile jars. Fill to within 1/2-inch of the top.
    Adjust screw band.
    Process in boiling water bath 5 minutes.
    Yields 6 pints.
