Oven-Fried Chicken A La Creole - cooking recipe

Ingredients
    1/4 c. oleo
    1 1/2 tsp. salt
    1/2 c. chopped bell pepper
    1/4 tsp. poultry seasoning
    1/2 c. plain flour
    1/2 c. chopped onion
    1 frying chicken, cut up
    1 tsp. paprika
    3 c. hot chicken broth
    1/8 tsp. black pepper
    1 c. raw rice
Preparation
    Melt oleo in 9 x 13-inch glass dish in oven.
    Mix salt, paprika, poultry seasoning, black pepper and flour in a bag.
    Add chicken pieces.
    Shake to coat.
    Place pieces, skin side down in melted oleo.
    Bake for 30 minutes at 375\u00b0.
    Remove chicken from dish.
    Combine rice, bell pepper, onion, pinch of salt and pepper. Spread in dish.
    Place chicken on top.
    Pour hot broth over all. Bake 45 minutes at 375\u00b0
    or until rice and chicken are done. Makes 4 to 6 servings.
