Crab Salad - cooking recipe
Ingredients

1 lb. fresh flaked crab meat or 4 cans crab meat
1/2 c. minced celery
1 tsp. grated onion
1 Tbsp. minced pimento
1/4 tsp. salt
2 Tbsp. lemon juice
mayonnaise
lettuce leaves
2 Tbsp. minced parsley, thin cucumber slices cut in swirls, small tomatoes and hard-boiled eggs (possible garnishes)
Preparation

Combine crab, celery, onion and pimento in bowl.
Sprinkle with salt and lemon juice; toss to mix.
Add just enough mayonnaise to moisten; mix well.
Spoon onto bed of lettuce and sprinkle with parsley.
Garnish with cucumber, tomato or egg slices.
Serve with additional mayonnaise on the side.
Delicious as first course or side salad; both kids and adults seem to enjoy this.
