Caramels - cooking recipe
Ingredients

2 c. sugar
1 stick margarine
1 pt. 1/2 and 1/2 whipping cream
3/4 c. Karo syrup
chopped nuts (optional)
1 sq. unsweetened chocolate
Preparation

Put 1 cup 1/2 and 1/2 milk in with all other ingredients.
Use a large pan (I use Dutch oven).
Bring to boil, stirring constantly.
Add rest of 1/2 and 1/2.*
Cook to soft ball stage on candy thermometer.**
Stir constantly.
Pour into greased 8-inch square pan.
(Sprinkle pan with chopped nuts first, if you want nuts.) Use metal spatula to pry candy out of pan after it has cooled.
Cut candy into small squares and individually wrap in pieces of wax paper.
Makes approximately 100 caramels.
