Potato Salad(Lyndsey'S Favorite) - cooking recipe

Ingredients
    2 lb. potatoes (about 6 medium), cubed
    1 small onion, diced (about 1/4 c.)
    1 tsp. salt
    pepper to taste
    1 to 2 stalks celery, chopped
    1 Tbsp. spicy brown mustard
    2 Tbsp. finely chopped carrot
    2 to 3 boiled, chopped eggs
    3 large sweet pickles, coarsely chopped
    1/2 to 3/4 c. lite mayo (more or less to taste)
Preparation
    While cubed potatoes cook until tender, chop the celery, onion, carrot and pickle and place into mixing bowl. Toss to mix flavors. Drain potatoes. Rinse to cool down; drain.
    Add to vegetables. Fold in mustard, eggs, mayo, salt and pepper. Take care not to squash up
    the potato cubes. Chill and enjoy.
