Squash Fritters - cooking recipe

Ingredients
    2 c. cooked, mashed yellow squash
    2 eggs, beaten
    1/2 c. cracker crumbs
    hot salad oil
    1 tsp. salt
    1 small onion, chopped
    1/4 tsp. black pepper
Preparation
    Combine squash, eggs, onion, seasonings and crumbs.
    Mix well. Drop by tablespoon into hot oil.
    Cook until golden brown, turning once.
    Serves 6.
