Red Rice - cooking recipe

Ingredients
    3 strips crisp bacon
    2 Tbsp. oil
    1 small onion
    1 small green pepper
    1 can (16 oz.) tomatoes
    1 clove garlic
    a little parsley
    a little pimiento
    2 c. cooked rice
Preparation
    Crumble bacon; set aside.
    In small skillet in 2 tablespoons oil, cook chopped onion, green pepper, tomatoes and garlic about 5 minutes or until onion and pepper are tender.
    Add with crumbled bacon, some chopped parsley and a few slivers pimiento to 2 cups hot cooked rice.
    Toss to blend well.
    Makes 4 servings.
