Rotelle With Artichokes And Red Peppers - cooking recipe

Ingredients
    1 box rotelle
    3 Tbsp. olive oil
    1 clove garlic, crushed
    1 or 2 red peppers, chopped
    1 large tomato, chopped
    1 to 2 jars marinated artichoke hearts, drained
    1/2 c. fresh basil or 1 tsp. dried
    1 tsp. oregano
    1 Tbsp. wine vinegar
    1 c. grated Mozzarella
Preparation
    Cook rotelle according to package instructions.
    Heat olive oil in pan.
    When hot, add garlic and cook until golden.
    Add red peppers.
    Cook until still crunchy.
    Add tomatoes; cook 2 minutes. Add artichoke hearts.
    Cook until heated.
    Stir in basil, oregano and wine vinegar.
    Combine with cooked pasta.
    Stir in grated cheese.
    Serves 5 to 6.
