Peach Jam - cooking recipe

Ingredients
    4 c. ripe peaches, peeled and sliced
    1 (1 3/4 oz.) box powdered pectin
    1 1/3 c. mild flavored California honey
    1/4 c. fresh lemon juice
Preparation
    In a 5-quart saucepan, mash peaches and stir in the pectin. Bring to a boil and boil hard for 1 minute, stirring constantly. Add honey and lemon juice.
    Bring to a full boil and boil hard for 5 minutes, stirring constantly.
    Skim off the foam.
    Ladle into hot sterilized jars and seal.
    Makes four 1/2 pints.
