Sausage Scallopini - cooking recipe
Ingredients

1 lb. hot or sweet sausage
1 onion, thinly sliced
8 oz. fresh mushrooms, washed and sliced
salt and pepper to taste
2 to 3 red or green peppers, seeded and sliced
1 to 2 cans (8 oz. each) tomato sauce
Preparation

Place sausage in frying pan and pour in about 1 cup of water. Bring to boil and let simmer until sausage looks white.
Pour off water, then brown evenly on both sides.
Add sliced pepper, onion and mushrooms and saute until golden brown.
Add tomato sauce and simmer about 1/2 hour.
Correct seasoning.
Good with warm Italian bread.
