Oven Fried Eggplant - cooking recipe

Ingredients
    1 medium eggplant, cut in thick slices
    6 Tbsp. creamy Italian dressing
    6 Tbsp. grated Romano cheese
    1/2 c. Italian bread crumbs
    salt and pepper
Preparation
    Soak eggplant in cold water for 20 minutes.
    Drain and blot dry.
    Spread both sides with dressing.
    Press in cheese; then in bread crumbs, coating both sides.
    Arrange on a shallow pan, coated with cooking spray.
    Bake at 475\u00b0 for 4 minutes; turn and bake until golden brown and crisp.
