Nutmeg Coffee Cake - cooking recipe

Ingredients

nonstick spray coating
3/4 c. mixed dried fruit bits or raisins
2/3 c. skim milk
2 c. oat bran baking mix
1 tsp. finely shredded orange peel
1/4 tsp. ground nutmeg
2 slightly beaten egg whites
1/4 c. cooking oil
2 Tbsp. honey

Preparation

Spray an 8 x 8 x 2-inch baking pan with nonstick coating; set aside.
In a small bowl combine dried fruit and milk.
Let stand for 10 minutes.
Meanwhile, in a medium mixing bowl stir together oat bran baking mix, orange peel and nutmeg.
