Zucchini Corn Muffins - cooking recipe
Ingredients

1/4 c. butter, melted
1 large egg
1 c. skim milk
1 1/2 c. yellow cornmeal
1 c. flour
2 Tbsp. sugar
1 Tbsp. baking powder
1 tsp. salt
1/4 tsp. ground red pepper (optional)
1 medium zucchini, shredded
1 can whole kernel corn, drained
Preparation

Grease 12-cup muffin pan; set aside.
In small bowl, combine butter, egg and milk.
In medium bowl, stir yellow cornmeal, flour, baking powder, salt and pepper.
Add egg mixture, zucchini and corn, stirring until just combined.
Spoon batter into muffin pan.
Bake at 350\u00b0 for 20 to 23 minutes or golden brown.
