Oat Bran Muffins - cooking recipe
Ingredients

1 1/2 c. oat bran
3/4 c. whole wheat flour
1 c. sugar
1 Tbsp. baking powder
1/2 tsp. each: ginger, cinnamon, allspice and nutmeg
2 egg whites, slightly beaten
1/2 c. skim milk
3 Tbsp. vegetable oil
Preparation

Combine dry ingredients.
Combine egg whites, milk and oil. Add dry ingredients; do not beat.
Stir just enough to mix.
Add some raisins and drained crushed pineapple.
Mix well.
Spray muffin pan with Pam.
Bake at 425\u00b0 for 18 minutes.
Vary with other fruits such as blueberries, peaches, bananas, prunes and some molasses, etc.
