Lemon Poppy Seed Muffins - cooking recipe

Ingredients
    6 Tbsp. butter or margarine
    6 Tbsp. shortening
    1 c. sugar
    2 eggs
    1/3 c. lemon juice
    2/3 c. milk
    3 c. flour
    4 tsp. baking powder
    1 tsp. salt
    4 tsp. grated lemon rind
    1/4 c. poppy seed
Preparation
    Cream together butter, shortening and sugar until light and fluffy.
    Beat together eggs, lemon juice and milk; add to butter mixture.
    Mix flour, baking powder and salt, then add to mixture. Stir in poppy seed and lemon rind.
    Pour batter 2/3 full into 12 greased muffin cups (about 26 mini-muffins).
    Bake at 350\u00b0 for 20 minutes (10 to 15 for mini-muffins).
    Cool.
