Hopping Johns - cooking recipe
Ingredients

1/2 lb. black-eyed peas, cooked
1/2 lb. sausage
1/2 c. chopped onion
2 1/2 c. cooked rice
1 jar cherry peppers
Preparation

Drain and discard liquid from peas.
Saute sausage until done. Add onion; saute and drain.
Add to drained black-eyed peas and rice.
Season with Tabasco, salt and pepper.
Add cherry peppers. Serve as a main dish or as a side dish.
Makes 6 (1-cup) servings.
