Zucchini Casserole - cooking recipe
Ingredients

4 c. shredded zucchini
2 eggs, beaten
1 c. mayonnaise
1 chopped onion
1/4 c. grated Parmesan cheese
salt and pepper to taste
1 Tbsp. butter or margarine
2 Tbsp. bread crumbs
Preparation

Cook zucchini with small amount of water until just tender, about 6 minutes.
Drain off water.
In bowl, combine eggs, mayonnaise, onion, cheese, salt and pepper.
Pour over zucchini, stirring lightly to combine.
Mix crumbs and butter, sprinkle over casserole.
Bake at 350\u00b0 for 20 minutes.
(Insert knife to test for doneness.)
