Roast Pork With Dried Fruit - cooking recipe

Ingredients
    2 lb. rolled pork loin
    1 c. dried apricots
    1 c. dried apple slices
    1 c. pitted prunes
    1 c. brown sugar
    1/2 c. dry white wine
    1 Tbsp. flour
Preparation
    Preheat oven to 325\u00b0.
    Put 1 tablespoon flour in oven cooking bag.
    Place pork and dried fruit in bag. Place bag in shallow roasting pan. Sprinkle in brown sugar and pour in the wine. Tie securely and puncture 4 holes evenly spaced across top of bag. Roast 1 1/2 hours or until meat thermometer reads 170\u00b0.
    Slit bag open carefully to avoid escaping steam. Place meat on serving platter.
    Spoon the fruit and cooking glaze over the meat.
