Beef Stew In Pumpkin Shell - cooking recipe

Ingredients
    2 lb. beef stew meat, cut in 1 1/2-inch cubes without any excess fat
    1 large onion
    2 cloves garlic
    2 large tomatoes, chopped
    salt and pepper
    1 tsp. sugar
    3 white potatoes, peeled and diced
    3 sweet potatoes, peeled and diced
    2 c. beef broth
    1 medium pumpkin (about 6 lb.)
    1/4 c. dry sherry
    1 (1 lb.) can whole kernel corn, drained
    chopped parsley
Preparation
    Saute beef with onion and garlic until browned.
    Add tomatoes, green pepper, 2 teaspoons of salt, 1/2 teaspoon of pepper, sugar, white potatoes, sweet potatoes and broth.
    Cover and simmer 1 1/2 hours.
    Add more salt, if desired, for taste.
