Homemade Sausage - cooking recipe
Ingredients

4 lb. lean pork (1/4 fat)
5 tsp. salt
4 tsp. ground sage
2 tsp. ground black pepper
1/2 tsp. ground cloves or 1 tsp. nutmeg
1 tsp. sugar
1/4 tsp. ground cayenne pepper (optional)
Preparation

Coarse-grind pork with
1/2-inch plate.
Mix ingredients well by hand, then grind again, using 1/8-inch plate.
