Pumpkin Muffins - cooking recipe
Ingredients

1 c. pumpkin
2 eggs, beaten (can use egg substitute or egg whites)
2/3 c. nonfat dry milk (do not mix with water)
2 tsp. pumpkin spice
1 tsp. cinnamon
8 pkg. Sweet 'N Low (Equal does not cook at high temperatures; sweetener can be adjusted to taste)
1/2 c. grated carrots
6 Tbsp. flour *
4 Tbsp. raisins
1 tsp. baking soda
1 tsp. vanilla
Preparation

*Can use 3 tablespoons flour and 3 tablespoons oat bran; this absorbs the moisture from the pumpkin.
