Baked Stuffed Potatoes - cooking recipe

Ingredients
    4 Idaho potatoes, washed and dried
    2 Tbsp. butter or margarine
    1/2 c. sour cream or heavy cream
    2 Tbsp. chives or scallions, chopped
    salt and pepper to taste
Preparation
    Bake potatoes for 1 hour or until done. Remove from oven.
    Cut in half lengthwise.
    Scoop out potatoes (careful not to break shell) in saucepan. Add remaining ingredients and blend well. Beat until fluffy. Add more sour or heavy cream and butter or margarine if necessary. Fill potato shells. Sprinkle with cheese of your choice.
    Bake at 400\u00b0 for 1 hour.
