Venison Sausage - cooking recipe
Ingredients

2/3 ground venison
1/3 ground smoked bacon ends
4 oz. salt
1 oz. pepper
1/2 oz. sage
1/2 oz. ginger
Preparation

Be sure the fat, ligaments and tissues are all trimmed from the venison.
Use the amount of seasonings listed for 10 pounds of the meat mixture.
Mix all thoroughly.
Make into patties for frying or into rolls for use.
This freezes nicely.
