Italian Chicken Vegetable Soup - cooking recipe

Ingredients
    1 large onion, diced
    1 Tbsp. cooking oil
    3 to 4 skinless chicken breasts
    3 qt. water
    6 chicken bouillon cubes
    2 large cans Italian stewed tomatoes
    1/4 head broccoli
    1/4 head cauliflower
    1 (16 oz.) can mixed vegetables
    1/4 c. fresh parsley
    1 c. Acini De Pepe pasta soup
    salt and pepper
Preparation
    Saute onion in large pot; add chicken, water and bouillon. Cook until tender.
    Remove chicken to cool.
    Add to the pot, stewed tomatoes, broccoli, cauliflower and mixed vegetables; cook until soup comes to a boil.
    Add soup pasta, cook 10 to 15 minutes.
    Debone and dice cooled chicken breasts; add to soup. Serve.
