Potato Onion Soup - cooking recipe

Ingredients
    2 c. onion (vary amount) according to taste
    2 Tbsp. butter
    4 medium potatoes
    2 cans chicken broth
    1 tsp. salt
    1/8 tsp. white pepper
    1 c. light cream
    1/4 c. finely shredded Cheddar cheese
Preparation
    Saute onions in butter for 5 minutes.
    Pare and cube potatoes. Add to pan with broth, salt and pepper.
    Bring to boil.
    Reduce heat.
    Cover and simmer 20 minutes or until tender.
    Blend until smooth.
    Stir in cream.
    Heat slowly just until hot.
    Garnish with Cheddar cheese and bacon bits.
