Ingredients

1 (20 oz) package frozen hash browns
1/2 green pepper
12 eggs beaten
2/3 cup milk
salt and pepper to taste
1 large onion diced
2 tsp. butter
2 cups ham, bacon, or sausage
1 cup shredded cheddar cheese
Preparation

Brown onions and green pepper in butter.
Spread hash browns on bottom of a greased 9 x 13 pan.
Sprinkle meat over hash browns. Beat eggs, milk, salt and pepper together.
Pour over potatoes. Top with cheese.
Bake at 350 degrees for 45 minutes.
(This works great if it is covered and refrigerated overnight and baked in the morning.)
