Chicken And Sausage Gumbo - cooking recipe

Ingredients
    5 Tbsp. cooking oil
    1 c. flour
    1 cut up chicken (3 to 4 lb.)
    1 gal. water
    1 tsp. garlic salt
    1/2 tsp. red pepper
    salt and black pepper to taste
    1/2 c. green onions, chopped
    1/2 c. parsley, chopped
    1/2 tsp. file (optional)
    1 lb. smoked sausage
Preparation
    Add oil to black cast-iron pot over medium heat.
    Add flour, slowly stirring until this \"roux\" is golden brown.
    Add chicken to flour mixture (roux) and stir for 2 minutes.
    Add chicken and water mixture to 1 gallon of water.
    Add seasonings.
    Cook over low heat until chicken is tender (approximately 2 hours).
    Cut up smoked sausage in 1/2-inch slices and add to chicken and flour mixture. After about 2 hours, add onions and parsley and cook for about 15 minutes longer.
    The longer it simmers, the better it tastes.
    Then serve over hot rice.
