Sugar-Free Carrot Cake - cooking recipe

Ingredients
    3 c. flour (2 all-purpose, 1 whole wheat)
    3 tsp. baking powder
    1 1/2 tsp. baking soda
    3 tsp. cinnamon
    1 tsp. nutmeg
    1/2 tsp. cloves
    1/2 tsp. allspice
    1/8 tsp. salt
    1 tsp. orange peel
    2 c. grated carrots
    1 c. raisins
    Cream Cheese Frosting
    1/4 c. apple juice concentrate
    1/4 c. pineapple juice
    2 large eggs
    1/2 c. oil
    1/2 c. nonfat buttermilk
    2 tsp. vanilla
    3 ripe bananas, sliced
    1/2 c. drained, crushed pineapple
    1/2 c. chopped pecans
    1/2 c. coconut without sugar
Preparation
    Stir dry ingredients together in large bowl.
    Heat raisins, pineapple and juices.
    Boil 2 minutes.
    Puree raisin mixture in blender.
    Add eggs, oil, buttermilk, vanilla and bananas.
    Blend. Add to dry ingredients and stir.
    Add carrots, nuts and coconut. Stir.
    Bake at 350\u00b0 for 45 to 60 minutes in 13 x 9-inch sprayed pan.
