Winter Carrot Casserole - cooking recipe

Ingredients
    1 1/2 lb. carrots, sliced
    1/2 c. mayonnaise
    2 Tbsp. chopped onion
    2 Tbsp. horseradish
    1/4 tsp. salt
    dash of pepper
    1/4 c. crushed crackers (Ritz or saltines)
    2 tsp. butter, melted
Preparation
    Cook carrots in boiling water for 10 minutes or until tender. Drain.
    Place in 1-quart casserole dish.
    Combine mayonnaise, onion, horseradish, salt and pepper.
    Spoon over carrots.
    Mix crumbs and butter.
    Sprinkle on top of carrots.
    Bake, uncovered, in a 350\u00b0 oven for 30 minutes or until hot.
    Yields 4 to 6 servings.
