Ingredients

2 eggs
2 c. milk
1/2 c. raisins
1/8 tsp. cinnamon
1 1/4 c. cooked rice
1/4 tsp. salt
1/2 c. sugar
1 Tbsp. powdered sugar
Preparation

Separate eggs into whites and yolks.
Add 2 tablespoons milk to egg yolks.
Place remaining milk on stove in a double boiler. Wash the raisins.
Put them in the milk and cook until soft (approximately 15 minutes).
Add rice; cook 5 minutes, then stir in yolks, salt, sugar and spices.
Stir well and cook about 3 minutes.
Remove from stove and pour into serving pan.
Beat whites of eggs lightly, then add sugar.
Spread on top of pudding. Brown lightly in oven.
Serve cold.
