Depression Cake - cooking recipe

1 (15 oz.) box raisins
3 c. water
2 c. sugar
1 Tbsp. butter or margarine
4 Tbsp. ground cinnamon
1 tsp. allspice
3 1/2 c. all-purpose flour
1 heaping Tbsp. baking soda
Preparation

Preheat oven to 325\u00b0. Combine raisins, water, sugar, butter, cinnamon and allspice in a large saucepan or Dutch oven and bring to a boil. Cook for 2 or 3 minutes, then set aside to cool. When cool, stir in the flour and baking soda. If mixture seems too thick compared to regular cake batter, add a little more water, a teaspoon at a time. Pour batter into two 8 1/2 x 4 1/2 greased and floured loaf pans. Bake for 60 to 70 minutes or until wooden toothpick inserted in center comes out clean. Yield: 8 servings.
