Italian Sausage And Mushrooms - cooking recipe
Ingredients

2 lb. Italian sausage (1 lb. hot and 1 lb. mild)
2 lb. fresh mushrooms or 24 oz. canned buttons
3 c. red wine (dry Burgundy type, not sweet)
2/3 c. tomato sauce
1 1/2 tsp. fennel seed
1/2 tsp. onion salt
a little red crushed pepper
black pepper
1/4 tsp. oregano
1 garlic glove
Preparation

Fry sausage; cool.
Slice into 1/4-inch slices; put aside. Drain fat from pan.
Fry the mushrooms or saute the canned ones. Put in wine; let the alcohol burn off.
Add tomato sauce.
Cook until fairly thick.
Add seasonings.
Add all ingredients together. Let it set overnight.
Heat before serving.
Stir frequently. Serves 25.
